幕末から明治時代にかけての日本では、牛肉を食べる人が急増しました。
当初、関東地方では煮て食べる牛鍋、関西地方では農具の鋤の上で焼いて食べるすき焼きが流行しました。
1923年の関東大震災で東京の牛鍋屋の多くが被害を受け、代わって関西風のすき焼きと牛鍋をアレンジした、現在のすき焼きが誕生したといわれています。
